He puts the rice in the cracks to create mold and water to create rust, effectively destroying the bars and escaping in order to find and kill Jet Li.

Yeah the rice expands and cracks the bars more. When added to the rust, it makes them easier to crack. Right?

*bangs head against desk* Okay - guy puts rice in cracks. Pours water over rice. Rice expands. Cracks get worse. After six months guy can pull bars from window. Crawls out of window. The end. Okay!? Are we done now? Can we move on! ?
